Zucchini Bread

3 eggs, well beaten                      3 c. flour

1 c. vegetable oil                       1 tsp. salt

2 c. sugar                                1 tsp. baking soda

2 c. grated, peeled zucchini             3 tsp. cinnamon

3 tsp. vanilla                            3/4 tsp. baking powder

1/2 c. coarsely chopped walnuts


Mix well the eggs, oil, sugar, zucchini and vanilla. Add sifted dry ingredients. Stir in nuts. Bake in 3 greased bread pans at 350 deg. for 1 hour.
