1 pkg. yellow cake mix
3/4 c. Vegetable Oil
1 pkg. lemon Jello (dry)
3 eggs
1 c. water
1 tsp. lemon extract (or grated lemon rind)
Mix all together as for one-bowl cake mix.
Bake at 350 deg. 45 minutes or less. After cake is done take from oven. Using a fork, make piercing to the bottom, about 1" apart. Immediately pour over cake the lemon topping (see below). To serve, let cool and spoon whipped cream or whipped topping over.
1/3 c. melted butter
1 c, powdered sugar (sifted)
6 tbs lemon juice
Mix all together and drizzle over top of hot lemon cake.
