Betty's Brown Bread

3-1/2 c. milk
1 cake yeast (or 1 envelope)
1/4 c. warm water
3 tsp. salt
2 tbsp. melted shortening
2 tbsp. sugar or honey
10 c. whole wheat flour

Scald milk (or use 1-3/4 c. canned milk and 1-3/4 c. boiling water). Dissolve yeast in warm water. Add salt, melted shortening and sugar or honey. Stir in whole wheat flour. Knead 10 minutes. Put in greased bowl, cover with cloth and let rise 45 minutes. Punch down and make into 2 loaves. Let rise 30 minutes in greased loaf pans. Bake at 350 deg. for 1 hour. Turn out of pans and cool on racks.

Makes 2 loaves.
