Fruited Pound Cake

1-3/4 c. sifted flour                         1/2 c. shortening or butter
1-1/2 tsp. baking powder                 3/4 c. canned milk
1 tsp. salt                                       1 egg, unbeaten
3/4 c. sugar                                    1-1/2 tsp. vanilla
                                                     1 c. finely chopped mixed candied fruits

Sift dry ingredients into mixing bowl. Add shortening, milk, egg and vanilla. Beat 3 minutes with mixer on medium speed. Scrape sides and bottom of bowl frequently.

STIR IN the candied fruit by hand with a spoon.  

Pour batter into ungreased loaf pan which has been lined with parchment paper.

Bake at 325 deg. for 1 hour and 10 minutes. When baked, turn out of pan onto wire cake rack to cool. Carefully remove parchment paper. Let stand until thoroughly cold before slicing.
Makes 1 loaf.
