Plain Muffin

2 c. flour                               1 c. milk
4 tsp. baking powder              1/8 c. melted shortening (2 tbsp.)
2 tsp. sugar                           1 egg
1 tsp. salt

Sift dry ingredients into large bowl. Beat egg slightly. Add milk and melted shortening. Stir all into dry ingredients, mixing thoroughly in 25 strokes only (do not overmix, or muffins will be tough and tunneled.)

Bake in well-greased muffin tins at 450 deg. for 20 minutes, until golden brown.

Makes 12 muffins.
